I'm curious to know how to setup the installation so that it comes up when I use http://myhostname.noip.net/addressbook instead of needing to use http://myhostname.noip.net/addressbook/staff?

Unfortunately, it's not possible. It was requested a couple of times before so I'm aware that it's important to some people, but it hasn't been implemented yet.
